I don’t know if I should call masto-o Khiar ماست و خیار a dip, side dish or even a main dish!! (Yes, just last night I ate Mast-o Khiar as dinner) Any way, the main ingredients here are cucumber and yogurt. I think it’s safe to say each and every person have their own mix of herbs for Mast-o Khiar!
In Iran people purchase all kinds of fresh herbs regularly (if not to say everyday), but this is one of the dishes that I mostly seen prepared with dried herbs. I leave the recipe here which I made with my favorite mix of herbs, but you can go ahead and use the other herbs you have in your pantry/fridge.
Oh also olive oil is not common to use in Mast-o Khiar but I live the combination. Give it a try and you won't be disappointed.
This recipe will gives you around 2 cups of Mast-o Khiar.
Ingredients:
1/2 cup grated cucumber
2/3 cup thick yogurt
1 tsp dried dill
1 tsp dried mint
1/4 tsp Kakouti
Salt and pepper to taste
Olive oil to drizzle
Instructions:
Squeeze the grated cucumber so the excess water comes out.
In a bowl mix all the ingredients together except olive oil.
Adjust the seasoning to your taste, drizzle with olive oil and sprinkle the top with dried rose petals.
