Warm butternut squash walnut dessert

I remember when I was a kid, this was our favorite evening snack in fall and winter. My father loves sweets, and it was always some leftovers of butternut squash in our fridge which we didn’t know what to do with it. So my mom made up this dessert! It’s sweet, it’s warm, it’s easy and quick to make. It’s basically all the things that you can ask from an evening snack in cold weather. (If you’re craving for something sweet though).

My mom version of this dessert was simple butternut squash with butter and that's it. I tried to make it a bit fancier and bring one more texture to it by adding walnut. Also you can serve it with a scoop of gelato, dream came true ha? It might be something new for you, but believe me it’s sooo good that you want to make it again and again.


I used cutter to cut the butternut squashes into the same sizes (for better photos honestly), but it’s totally unnecessary if you want to make it just for yourself! Don't bother yourself, this is a comfort quick dessert.

This recipe is enough for 2 people.



Ingredients

Butternut squash: 4 pcs (cut crosswise about 2 cm and peeled )

Butter: 30g or 2 tbsp

Walnut: a small handful

Cinnamon sticks: 2

Cardamom seeds: 5-6

Sugar: 25 gram or 2 tbsp

Vanilla gelato: 1 scoop (optional)




Instruction

Choose a pan with lid. Put butternut squashes in to the pan on medium heat, add 1/4 cup water, cinnamon sticks and cardamom then close the lid.

Check them after about 10 minutes with a knife to see if they cooked. If not cook them till they are soft in the middle but not mushy.

Once they are soft, take the lid out and add half of the butter to the pan. We want to sauté them so don’t flip them before the color changes to brown. This will give it a nice crispy texture on the edges.

Once they got brown-ish color on both sides, take them out of the pan.

Keep the cinnamon and cardamom in the pan, add sugar and the other half of the butter to the same pan. Once sugar dissolved add walnuts to the pan. Just stir them till all the walnuts are coated with sugar and butter. (We don’t want to candied walnuts so don’t let sugar and butter boil. We just need to heat up sugar till dissolved and makes a syrup).

For serving it , place butternut squashes in a plate, pour syrup and walnuts on top and around the plate.

You can serve it with a scoop of gelato also, it’s up to you but I would recommend it :)
