One of my favorite things about fall is that I get to cook with pumpkin in many different ways. One of my favorite recipes is pumpkin risotto.
This pumpkin risotto is reach, creamy and full of flavors. I replaced half of the broth with milk to have an extra creamy result. Bacons are bringing extra crunch and saltiness to the risotto and parmesan cheese is just a perfect finishing touch for any risotto recipe. You can either use a canned pumpkin pure or make your own, the result would be very tasty anyway. Risotto is bests to enjoy immediately. Serve this recipe with Osso Bucco or any beef stew for a perfect Christmas dish.
