Flourless chocolate cake

I’ve made so many chocolate cakes before but to be honest this is my favourite one.

It’s so light and rich at the same time. And guess what? There is no flour in the recipe! If you’re looking for a gluten free chocolate cake, this is it.

It’s also so easy to make. It takes maximum an hour and half to make and bake it. So if you start it right now, you can enjoy it in less than 2 hours.

For this recipe I used a 15cm pan and it serves max 4 people but if you want a bigger cake, you can totally double up the recipe and using a bigger cake pan.

Ingredients

Bittersweet chocolate: 135g

Unsalted butter: 80ge

Eggs: 3 (1 whole egg and 2 separated)

Sugar: 60g + 30g

Espresso: 1shot (or you can use vanilla extract)

Cocoa Powder: For dusting


Instruction

Preheat the oven to 335°f. Start with preparing your cake pan. You can use a parchment paper on a spring foam pan, but I used a regular pan with parchment paper and I took the cake out of it pretty easy. (Since there’ll be cracks on top of the cake, I didn’t mind to makes more cracks by flipping the cake.

Put the pan aside and start melting chocolate and butter on a metal bowl over a double boiler. In a mean time whisk 1 whole egg, 2 egg yolks and 30g sugar by hand till they incorporate. Put 2 egg whites on a bowl and start whisking it with mixer.



Once it starts to get foamy, start adding the second part of sugar(60g) to it slowly. Don’t over whisk it, we need to get a medium peak egg whites not a hard peak. When the chocolate and butter melts, slowly add it to your egg yolk mixtures and whisk it by hand in a mean time. Once it mixed completely, fold the egg white in to the chocolate mixture.

Do it gently because we need the mixture to be fluffy.



At the end add the espresso shot and keep folding it till everything mixed. (You can use a tbsp vanilla extract instead, or about 2 tbsp of any liqueur that you desire).

Pour the fluffy mixture to the cake pan and pop it in the oven. It will take 30-35 minutes to bake. Take the cake out of the oven and let it cool down completely then unmold it. I used cocoa powder to dust on top but it's up to you if you want to use it or not.
