These feta bites became my favorite appetizers of all time! Just look how cute they are! Not only they are cute, they are absouloutly delicious too! If you like feta cheese this is the recipe that you definitely want to try. This is a very easy recipe to make with minimum ingredients. Feta cubes are wrapped between layers of crunchy phyllo dough and made perfect bite size feta pillows! Yes, that's where the name is coming from!
Pomegranate seed and fresh dill are bringing color and extra flavor to this appetizer but depends on your taste you can replace dill with your favorite herbs or ignore it.
These feta bites can be keep in the fridge for up to couple days, just heat them in the oven before serving. It can be also made ahead of time and cook them before serving.
This recipe gives you 12 feta bites, you can multiply the recipe based on the number you serving.
200g feta cheese cut in 1 inch cubes, 12 pieces total
5 layers of phyllo dough approximately 9/14 inches.
2 tablespoons butter
2 cloves garlic (minced)
2 tablespoons sesame seeds
pomegranate seeds for garnish
fresh dill for garnish
Preheat the oven to 375°F.
Melt the butter in microwave, mix it with minced garlic.
Place one sheet of the phyllo dough on a cutting board. With a pastry brush, brush melted butter all over the top.
Place the second sheet on top and repeat the process until the last phyllo.
Place the feta cubes on top of layered phyllo in 3 rows, 4 in each row (with approximately 2 inch apart from each other).
Cut the dough to 12 pieces from between each feta cubes. You should have 12 squares of phyllo with a feta cube in middle of each.
Grab a dough, rotate the feta in middle to 45 degree. fold each angle and bring it to center of the feta. Feta should be wrapped in the phyllo shaped like a pillow.
Repeat this process for all the fetas.
Brush the top with butter and dip the top in sesame seed (this way sesame seeds will cover the top completely).
Place the feta bites on a baking sheet with parchment paper.
Bake them in preheated oven for 15-20 minutes or until golden brown.
Place them in your serving platter. Garnish with pomegranate seeds and fresh dill.
