Cherry Ricotta Toast

Summer is here which it means cherries are back in market again! I love making recipes with cherries either sweet or savory and this recipe is now my favorite thing to eat for rest of the summer. Whipped ricotta is one of my absolute favorite things to spread on top of a toasted bread. One of the main reason is that it's very adoptable and you can basically add any of your favorite spices or herbs to it. I personally prefer it to be salty and even a bit lemony, but you can also add honey and make it sweet instead. This recipe comes together in no time and it can be either serve as a snack, a quick breakfast or even a perfect addition to your bbq table.




Yields: 4 Toasts

Prep Time: 10 minutes

Cook time: 5 minutes



Ingredients:

  • 4 Slice Breads (toasted)

  • 1 cup Ricotta Cheese

  • 1 tsp Fresh Thyme

  • Salt and pepper

  • 1 tbsp Olive Oil

  • 1 tbsp Honey

  • 1 1/2 tbsps Balsamic Vinegar

  • 2 cups Cherries (pitted and halved)

  • 1/4 cups Walnuts

  • Flakey Salt (for garnish)

  • Fresh Basil leaves (for garnish)


Instructions:

  1. Add the ricotta and thyme to a food processor. Process until smooth. Season with salt and pepper and set it aside.

  2. Heat up a skillet over high heat. Add in the olive oil and honey. Add the cherries in, give it a stir and add the balsamic vinegar.

  3. Sauté the cherries for 2 to 3 minutes. Meanwhile, chop the walnuts.

  4. Spread the whipped ricotta over the toasted breads and spoon the cherries on top.

  5. Sprinkle with chopped walnuts and flakey salt. Garnish with basil leaves and enjoy.
